Casanara is courtesy of partners Tom Roughton, formerly of BK’s Izzy Rose, and Max MacClennen, a stage designer for Coachella. And with its central disco ball and sensually curvaceous ceiling, it has a distinctly idiosyncratic allure - though the overall vibe is most definitely laid-back. Roughton has traveled extensively through the Caribbean and Latin America, so the cocktail program here is focused on cane and agave spirits. Drinks like the mezcal-based Seven Sisters, made with pink peppercorn, and the rum-and-absinthe Siren’s Spell are stand outs.
